A gypsy at heart, Carol yearns for adventure. Never truly satisfied with current state, she is always searching for more and more knowledge. Willing to try just about anything, her thirst for adventure and new experiences keeps her ideas and creativity fresh. And it brought her here through cooking.

She has served as a helpful role to those seeking inspiration, help, or advice. In 2021 she finally decided to own that role and be intentional about it. Starting to write about her passions, thoughts, and curious wonderings about our society. She founded this blog, CarolOfMoon and Cooking Class with Carol with a mission to give others a taste of what goes on in her mind and share the food that makes her happy.

A native of McKees Rocks PA, Carol attended West Virginia University and received a degree in Business Administration with an emphasis on finance and a minor in economics. While at WVU she met lifelong friends who enjoy the adventures with her-- whether food or travel. From there her adventures in life took her to Albany NY, Reston VA, and Washinton DC before coming home to settle in Moon Township and focus on raising her three children Ava, Sofia and Enrico. Together with her husband Dan they have created a financial technology consulting firm, Enfiva Consulting, Inc. and run a family-owned business, Kennedy School of Driving, Inc. Her hobbies include riding horses, skiing, crocheting, hiking with her dogs, and of course cooking for the people she loves.
