Ingredients
•16/20 raw shrimp, peeled, deveined and grilled
•1 cup mango (I used thawed, frozen with juice reserved)
•1/2 red onion, slightly pickled (1/4 cup rice vinegar and 2 teaspoons sugar)
•2 Serrano peppers, finely chopped
•2 red Fresno peppers, finely chopped
•cilantro leaves, whole
•salt and pepper to taste
What to do:
1. Peel and slice red onions. Add rice vinegar and sugar to onions. Incorporate well and allow to pickle slightly (30 minutes)
2. Peel, devein, dry and season shrimp
3. Heat sautée pan or grill to just smoking and add shrimp to pan, cooking 90 seconds on each side or just til edges curl and turn pink. Allow to rest and cool.
4. Finely chop peppers and pull cilantro leaves
5. Thaw or chop mango - reserve juices for dish.
6. Add all ingredients together. Mix well. Chill. And serve.
