Mark Singo worked his way from the trenches to the top of the restaurant hierarchy. From busboy to executive sous chef and every down and dirty job in between.

Now he brings his knowledge and expertise to our blog as a way to continue the mentoring he received throughout his career.

Whether it is a ten-course meal for 30 or a barbecue for 200, Mark has the expertise to prep, prepare and execute the food to perfection.

I was lucky enough to include Mark as family 20 years ago when my neighbor turned cousin Cindy brought him to my house for the first time. I barely could see his face as he was carrying a box of food big enough to feed an army. That's how Cindy cooked. But I knew the quiet tall man was just like us--a bunch of sarcastic quick witted food lovers. It just took a few visits before he was busting balls like the rest of us!

Mark taught me so much about cooking-- I'm so glad he agreed to contribute to the blog. You will learn so much from him too!
